Skinny keto bell pepper boats
For meal prep this week, I made me some low carb skinny bell pepper boats! This recipe was inspired by stuffed bell peppers. Before my weight loss journey, I would get the ones pre made at Costco and they would be mixed with white rice, which I don't eat white rice anymore. I really wanted to make a low carb keto option that is also in smaller portions! Let’s get started!
First you will need:
6 any colored bell peppers
1 1/2 cups of low fat skim mozzarella cheese or or favorite healthy cheese
2lbs of lean ground turkey
1/2 large yellow onion
2 garlic cloves
1/8 tbsp onion powder
1/2 tbsp black pepper
1/4 tbsp sea salt
1/4 tbsp oregano
1/4 tbsp garlic granules
1 tbsp of olive oil
First slice each bellpepper into 4-6 vertical slices for your boats. You can choose how big you want your boats to be. I did about 4 per bellpepper. Remove seeds, core, and membrane. Set sliced bell peppers aside.
Next slice and cut the onion, and dice garlic cloves. Mix into large skillet with olive oil on med heat. Cook until very light brown.
In the same skillet, add ground turkey and cook until brown on med heat with onions and garlic. Add in spices, oregano, garlic, onion powder, salt, and pepper. Mix well. Stir occasionally making sure it’s evenly cooked.
While the turkey is cooking, lay out the boats in a 9x12 baking pan. You may need two batches for this serving size.
When the turkey is done, evenly disperse a tablespoon of turkey and onions mix into each Boat.
Then sprinkle the tops of the boats with the cheese.
If you want softer peppers. Add two tablespoons of water the bottom of the pan. Cover with aluminum foil and bake at 350 degrees for 15 minutes and bake 5 minutes uncovered or until cheese melted or desired golden color. For a more Crispy pepper, bake uncovered at 350 for 20 minutes or until cheese is melted to desired golden color.
Once finished, let cool 10 minutes and its Ready to serve!
Tips: try adding a healthy low fat sour cream on top for added flair or also a slice of avocado or pico de Gallo for more of a skinny nacho flavor.
